Marcala is a municipality in Southwestern Honduras, near La Paz. The land is known particularly for its exceptional coffee, which has exceeded its reputation throughout the national and international coffee market. To protect the prestige, the quality, and the namesake of coffee from this region, in 2005 a DOP (Protected Origin Denomination) was awarded to Café de Marcala, which was the first awarded to a Central American country.

In the year 2000, 62 Honduran coffee farmers joined together with a common goal to transform their farms from conventional to organic production and formed COMSA (Cafe Organico Marcala, S.A). In 2001, fostered by a foundation called Funder, COMSA earned their organic certification from Bio Latina which has enabled them to market their coffee to more international buyers and realize better selling prices for their coffee. In February 2006, COMSA then applied for and was granted Fair Trade certification status. COMSA uses the Fair Trade price premium to fund many social projects including paying teachers’ salaries and purchasing school supplies. The premium also finances the construction of kitchens in the schools in support of the Merienda Escolar program that provides meals for school children. The co-op produced a full 300 bag lot of natural sundried coffee this year. This coffee particularly stands out because instead of being mechanically washed, it is a dry process (natural) microlot that was sundried on a patio and hand-processed -- this is extremely unusual for Honduran coffee. We carefully roast this coffee to a medium/ light medium roast (just between a city and full city roast) at this roast level it has a pleasant acidity and a lot of sweetness coupled with savory notes. It is smooth, with no earthiness, and sweet pleasant brown sugar aftertaste.  Great complexity that is particularly interesting in the mouth because it has both sweet and savory, and there's a lot going.
